Animal foods generally take far more water to produce than plant foods. Producing 1 kg of beef takes around 15,400 litres of water on average, compared with roughly 4,000 litres for pulses, about 1,600 for cereals and around 320 for vegetables (Water Footprint Network). Per gram of protein, beef’s water footprint is roughly six times that of pulses.
Why food is a water story
When we think about saving water, we picture shorter showers and dripping taps. But the biggest water use in most of our lives never comes out of a tap we can see. It is embedded in our food. Growing crops and raising animals is by far the largest use of fresh water on the planet, and what we choose to eat quietly shapes how much we use.
This hidden water has a name: the water footprint. It counts all the water used across a food’s whole production, from the rain that grows the feed to the water an animal drinks to the water used in processing. Once you count it all, the differences between foods are striking.
The numbers, compared
Here is roughly how much water it takes to produce a kilogram of different foods, using widely cited figures from the Water Footprint Network.

The pattern is clear. Animal products, and beef in particular, sit at the high end, mostly because of the enormous volume of feed the animals need over their lifetimes. Plant foods eaten directly skip that step, so far less water is lost along the way.
A fairer way to compare: water per gram of protein
Comparing by weight is useful but not perfect, because we do not eat foods purely by the kilogram. Protein is a fairer basis, since many animal foods are eaten as protein sources. Even on that measure, the gap holds: per gram of protein, beef’s water footprint is roughly six times that of pulses (World Economic Forum). Beans and lentils deliver protein at a fraction of the water cost.
It is worth being fair about nuance. Not all water is equal. “Green” water is rainwater that would fall anyway, while “blue” water is drawn from rivers, lakes and groundwater, which is the scarce kind. The headline figures combine these, so the local picture varies. But across almost every accounting method, animal foods use more.

Why this matters most in Asia
Water stress is not evenly spread, and many of the world’s most water-stressed regions are in Asia, where demand for animal products is also rising fastest. That combination makes diet a genuine water issue there. Asia is home to about 62.5% of the world’s people, so even small shifts in what the region eats change a lot of water use.
