Food is about a third of the problem
Before the diet numbers, one piece of context. Food systems account for roughly a third of all human-caused greenhouse-gas emissions. That makes what we eat one of the largest levers available, and unlike rebuilding an energy grid, it is a lever individuals can pull immediately. What the research shows
The studies do not all report the same number, because they measure different things, whole diets versus just agriculture, individuals versus whole populations. Taken together, though, they point clearly in one direction.
Whole-diet shift. A peer-reviewed review in the journal Nutrients found that moving to diets that exclude animal products could reduce diet-related greenhouse-gas emissions by around 49%, alongside large cuts in land and water use.
By diet type. A major study of agricultural emissions found reductions of about 84 to 86% for vegan diets, 69 to 70% for vegetarian diets, and 44 to 48% for flexitarian diets. Even the flexitarian option, which still includes some meat, nearly halves agricultural emissions.
At population scale. Research in Nature Climate Change found that if the roughly 57% of people who currently over-consume shifted to the EAT-Lancet planetary-health diet, that group would cut its dietary emissions by about 32%, with global food-supply-chain emissions falling around 17% overall once under-consuming populations eat slightly more.
In clinical trials. Real-world trials, not just models, back this up. Studies from the Physicians Committee found a low-fat vegan diet cut diet-related emissions by 35 to 55% within weeks.

The encouraging part is that you do not need to go all the way to make a real difference. A flexitarian shift, simply eating less meat rather than none, still cuts agricultural emissions by close to half. Perfection is not the price of impact.
Why beef and dairy are the key
Not all diet changes are equal. Because cattle produce large amounts of methane and account for about two-thirds of livestock emissions (FAO), cutting beef and dairy delivers the biggest reduction per change.
