Stuck for plant-based meal ideas?

Easy breakfasts, lunches and dinners you already half know

What are some examples of a plant-based diet?

A plant-based day does not need special ingredients or complicated recipes. It looks like porridge in the morning, a filling wrap or soup at lunch, and a curry, stir-fry or chilli in the evening. The trick is a simple formula for every meal: a plant protein, a wholegrain or starchy vegetable, and plenty of vegetables, with something tasty to bring it together.

What do you eat for breakfast on a plant-based diet?

  1. Porridge made with fortified oat or soya milk, topped with banana, berries and ground flaxseed.
  2. Wholemeal toast with peanut butter and sliced fruit.
  3. Scrambled tofu with spinach, tomatoes and a pinch of turmeric, on toast.
  4. Overnight oats with chia seeds and frozen berries, made the night before.
  5. Savoury rice porridge, known as congee, topped with spring onion, mushrooms and a little soy sauce.

Quick plant-based lunch ideas for work

The easiest work lunch is last night’s dinner: curries, chillies and stir-fries often taste better the next day. Other simple options include a hummus, falafel and salad wrap; a big lentil or bean soup in a flask; a grain bowl with rice, edamame, grated carrot and a peanut or sesame dressing; or a jacket potato with beans.

Easy plant-based dinner recipes for beginners

Start with dishes you already like, made with plants. These five are forgiving, cheap and hard to get wrong:

  1. Tofu and vegetable stir-fry: Fry cubed firm tofu until golden, add whatever vegetables you have, then soy sauce, garlic and ginger. Serve with rice or noodles.
  2. Lentil dal: Simmer red lentils with onion, garlic, tomatoes and curry spices until soft. Serve with rice or flatbread and a handful of spinach stirred in.
  3. Bean chilli: Kidney and black beans with tomatoes, peppers, cumin and smoked paprika. Make a big pot and freeze half.
  4. Chickpea and spinach curry: Chickpeas simmered with onion, tomato, coconut milk and spices.
  5. Pasta with lentil ragu: Swap mince for cooked green or brown lentils in your usual tomato sauce.

Asian classics that are naturally plant-based

Some of the world’s best plant-based food comes from Asian kitchens, and many families have been cooking it for generations. Tofu with greens and rice, lentil dal, chana masala, vegetable fried rice, miso soup with tofu, and Buddhist-style vegetable dishes are all naturally plant-based, or need only a small swap. A few favourites usually contain meat or fish sauce, such as mapo tofu or pad thai, but are easy to make with mushrooms and soy sauce instead. For many people with Asian heritage, eating more plants is less about trying something new and more about returning to food that already feels like home.

A simple plant-based meal plan for a week

Breakfasts can rotate between porridge, toast and peanut butter, and scrambled tofu. Remember the basics from our guide to plant-based health: cover vitamin B12 with fortified foods or a supplement, and consider vitamin D in autumn and winter.

Plant-based meal prep ideas for busy weeks

Spend an hour on Sunday and the week looks after itself. Cook a big pot of rice or another grain, a pan of dal or chilli, and a tray of roasted vegetables. Press and bake a block of tofu for quick protein. Make one dressing, such as peanut, sesame or lemon and tahini. Follow food safety advice from the NHS and Food Standards Agency: cool cooked food quickly, eat fridge leftovers within two days, and eat cooked rice within one day. Dals, soups and chillies freeze well in portions, so freeze what you will not eat by Tuesday.

How to make plant-based mince taste like meat

Whether you use lentils, chopped mushrooms or a shop-bought plant mince, the secret is the same: build savoury depth. Brown it well in a hot pan rather than stewing it. Add umami from soy sauce, miso, yeast extract or a little tomato purée. Smoked paprika adds a meaty note, and finely chopped mushrooms add texture and juiciness. Season more boldly than you would with meat.

What can I use instead of eggs?

Ready-made egg replacers are also widely sold in UK supermarkets, usually in the baking aisle.

A plant-based grocery list for a family in the UK

Good news for the budget: the cheapest foods in the supermarket are often the plant-based staples. Every one of the top ten UK supermarkets has had its own vegan range since 2020, according to The Vegan Society, and all the big chains deliver.

For specialist ingredients such as tempeh, miso, silken tofu and Asian greens, try Asian supermarkets, which often have the widest choice at the best prices, as well as health food shops and online grocers.

How ACTAsia helps people eat more plants

ACTAsia, an Asian-founded and Asian-led charity, runs Plant Forward to help people across Asia enjoy more plant-rich food through familiar local dishes. The campaign grew from four partner organisations in 2022 to 91 by 2025, reached around 100 million people on social media, and saw 78% of participants pledge to eat more plant-based food (ACTAsia CCN and Plant Forward Impact Report, 2021 to 2025). ACTAsia’s analysis finds a pound goes around three times as far in Asia as in the West (Grant C., 2024).
