But a good statistic comes with its uncertainty attached. The 14.5% number is from the FAO’s 2013 assessment, and researchers since have argued it both up and down. Some analyses put livestock closer to 16.5%, arguing the FAO undercounts. Others, such as the Breakthrough Institute, argue the honest range is about 12% to 20% once you account for uncertainty in methane data and how land use is treated. Where the emissions come from
Several respected sources tell a consistent story.
Animal agriculture emits through several channels at once, which is part of why it adds up.
Enteric fermentation. Cattle, sheep and goats produce methane as they digest food. The FAO attributes around 39% of livestock emissions to this source. Methane is short-lived but far more potent than CO2 over the near term, which is why it matters so much.
Feed production. Growing and processing animal feed accounts for roughly 45% of livestock emissions, according to the FAO, through fertiliser, machinery and land use.
Manure. Storing and managing manure adds about 10%, releasing both methane and nitrous oxide.
